The noodles have two different textures: hard parts that are pressed against the hot plate so they don’t burn, and soft parts.
The original sauce has depth, and the spiciness slowly builds up from deep within.
The mixed and grilled ingredients allow you to fully enjoy the distinctive textures of the spring onions and meat.
I also like the system that allows you to order different amounts of noodles and meat depending on how hungry you are.

There’s no other yakisoba that goes so well with pickled ginger.
First, eat it as is, then make it milder with a raw egg, then sprinkle some special pepper on it, and finally eat it with pickled ginger on top.
What an amazing yakisoba restaurant that allows you to enjoy four different flavors in one go. Apparently the restaurant originated in Fukuoka, Kyushu.
And to think that it’s located in Saitama just a few steps away…that’s interesting.
