Enjoy eggplant miso rice with plenty of vegetables at a local Chinese restaurant!

It says “Noodle and rice restaurant”. Today, let’s have rice! (No, today too, lol)

The cold water had slices of lemon in it, giving it a very refreshing flavor. It was a warm day in between winter, so I was thirsty and ended up drinking several cups of it.

I ordered “Eggplant miso rice.” Yes, it’s fried eggplant with miso on top of rice.

First, I took a bite of the rice soaked in eggplant miso…yes, it was sweet and spicy, the seasoning made it perfect for eating with rice.

The rice was too watery and too soft…personally, I prefer it a little harder.

Now, the main course, stir-fried eggplant with miso…oh, the crunch of the green onions is irresistible. It has a nice texture.

I started eating the rice faster and faster. If that’s how it was, I should have ordered a large portion…

The softness of the eggplant made me smile. Eggplant is best when stir-fried with miso after all. It’s healthy with lots of vegetables like carrots and chives.

The thick egg soup warmed me up. Plus, it had a strong pepper flavor but was light on the palate, so it was the perfect buddy for a strong-flavored stir-fried miso. The balance of flavors was perfect!

I was very satisfied with the delicious and filling stir-fried eggplant with miso.

To finish off the meal, we had a cold drink with slices of lemon, which was perfect!

It’s great value for money, and is sure to be a local Chinese restaurant that’s a favorite among the common people!!
